As summer is just a day away and the heat creeps in, we finally tried this simple recipe for Banana “Ice Cream” we’ve seen on PBS commercials several times with our few adjustments.

Ingredients:

3 ripe bananas

1 tsp unsweetened drinking cocoa powder

½ tsp honey

Maren (almost 3 years) cut up the bananas.  She was thrilled and very proud to use her handy skills with a butter knife.

We put the bananas in a bag and set them in the freezer for a few hours.  After they were nice and frozen we took them out and added the honey and the unsweetened drinking cocoa powder.

The kids all took turns adding their ingredients and then took turns operating the food processor to end up with a delicious, healthy, and smooth banana ice cream!

I wanted to add peanut butter too, but the girls decided they’d rather not.  There are so many variations you could make with this recipe, that I hope to have old bananas laying around again soon.  The final verdict on the dessert was, that two girls thought it was delicious, the other thought it would be more delicious if we added more chocolate.  Go figure.

I'm a part-time work from home, full time stay at home mom to two daughters and an Australian Labradoodle puppy. We are enjoying our last year before big girl school, playing with friends, swapping childcare to get the job done and getting crafty when we can fit it in. We live together in a wonderful community that we are truly thankful for and proud to be a part of. It takes a village and this is ours.
